Dark tea cookies and vanilla cookies
These crispy, rich tea cookies are made with Zenlab's original matcha "Tenkuu" and are full of matcha flavor. They are perfect with coffee or tea.
<Ingredients> (Matcha and vanilla make about 20 pieces)
- 50g unsalted butter
- 50g powdered sugar
- 30g eggs
- 60g plain flour (for vanilla batter)
- 60g plain flour (for matcha dough)
- Matcha (Tenkuu) 6g
<How to make>
- Preheat the oven to 180°C. Bring the butter and eggs to room temperature.
- Beat the room temperature butter with a whisk to soften it. Add the powdered sugar and mix until light and fluffy.
- Beat the eggs well and add them to ② in 3 to 4 portions, mixing well each time. *If the mixture separates halfway through, mix in a small amount of the flour (from both the vanilla and matcha) to return it to a smooth consistency.
- Divide the dough in half and sift in the flour. For the matcha dough, sift in the flour and matcha and mix until just combined. Wrap in plastic wrap and leave in the fridge for about 30 minutes.
- Roll it out to a thickness of 5mm and cut into shapes of your choice.
- Reduce the temperature to 170 degrees and bake for 12 to 14 minutes. When the outside is lightly golden brown and the bottom is browned, it is done. *Please adjust the time according to your home oven.
